Autoimmune means that the body inadvertently produced anti-bodies that damage its own tissues. Symptoms include diarrhea, fatigue and certain small bowel inflammation. People with Coeliac disease remain sensitive to Gluten. This is a protein found in wheat, rye, barley and oats. This is the same substance that remains when the flour of wheat or other grain is washed to remove the starch. With that in mind, people with coeliac disease should have a diet consisting of Gluten-free food. People diagnosed with this disease remain sensitive to Gluten for the rest of their life. This is short of saying that this is an incurable disease. Once Gluten is absent in the body, tissues are being repaired and food absorption returns to normal. A relapse occurs when Gluten is induced in the body. Any amount of gluten taken into the system, can damage the small intestines, no matter how small an amount.

Not all grains and starch are rich in gluten. Corn, potatoes and rice are acceptable for a gluten-free diet. If you are Asian and you cannot live without rice, that's good news for you buddy. If mashed potatoes are your thing, exalt and stop the cringe as this is definitely good news for you all. There are certain coeliac patients who show no improvement whatsoever with their so-called gluten-free diet. This is because small amounts of gluten are still present in their diet. He is a health care professional who specializes in food and nutrition after all so he knows what is acceptable in your diet and what is not. He will educate you also with what food to be considered in groceries and when eating out. This is important as a minor intake of gluten will result in a relapse. There is really no room for mistakes here.

You might find some reason to be glad in knowing that most beers and wines are gluten free. Just check the label. This means that the diet doesn't really spoil your social life and you can still gobble on your booze while watching a barnburner of a fight in pay per view TV.
