Ready for some hearty soups? Summer is quickly drawing to an end, and soon the cool winter evenings will be back. There is nothing better for a cool evening than a nice steaming pot of soup on the table with some cornbread or other bread to go along with it. Hearty soups are perfect for one pot diners. They are warm, filling, and tasty. No doubt everyone in the family will enjoy something warm on a cool night. If you are wondering what soups you should serve up this fall and winter, here is a look at some of the top hearty soups for cooler weather.
Chicken with Wild Rice Soup
One hearty soup that includes dairy, good protein from the chicken, and healthy wild rice is chicken with wild rice soup. It blends together the wild rice and chicken in a creamy milk based broth and some tasty spices. A small amount of cheese is added to the mix, but the soup is still low fat. It's tasty and satisfying.
Chili Mac "N" Cheddar Soup
If you have kids, this one is sure to be a big hit. It's a bit of a different take on macaroni and cheese. With some beef, cheese, a bit of zing, and some pasty, it's an entire meal in a bowl that the kids will ask for again and again.
Southwest Fish Stew with Cilantro
Instead of going for thick chowders that are laden with fat, consider this tasty fish stew that is low in calories and fat. Halibut is the fish used for the soup and you'll get a great tasty by adding jalapeno, lime, and cilantro to the mix. You'll add even more protein to the soup by adding in some shrimp, and this soup is easy and fast to make too.
Homemade Chicken Noodle
There is nothing quite as comforting on a cool evening as homemade chicken noodle soup. With fresh vegetables, plenty of chicken broth, tasty shredded chicken, and of course some thick noodles, this is a soup that tastes amazing and it will fill you up too.
Vegetarian Chili
If you'd like to go vegetarian for a night, vegetarian chili is a great soup option to try out. Tasty tomatoes that are full of antioxidants are included in the soup, as well as several different types of beans, giving you plenty of protein and fiber.
Chorizo and Lentil Soup
For a spicy soup, this chorizo and lentil soup is a perfect blend. You'll get the spicy chorizo taste along with the lentils that are full of fiber. Since this is a fast meal, it's one you'll want to make again and again, and it's very filling too.
Beef and Barley Soup
A traditional soup that is always a great choice on a cool evening is beef and barely soup. Beef gives you plenty of protein and is a good choice if you use a low fat cut of beef. The barely is a great way to get healthy fiber, and you'll want to throw in plenty of vegetables as well.
