Preparing raw food delicacies are made much easier when a food processor is used. This electrical appliance is mounted with an S-blade, permitting it to grind and pure all kinds of raw ingredients. When preparing raw cakes, pate cookies and pastries, like the Shortbread crust raw recipe offered below, the food processor is nothing short of essential:
1 cup shredded dry coconut (unsweetened) 1 C raw walnuts (unsoaked) 1/4 tsp. salt 6 pitted Medjool dates Put the first three ingredients in a processor fitted with an S-blade. Process until finely ground. Add the dates and process just until the mixture begins to stick together. (Don't over-process)
When stored properly, Shortbread Crust will preserve for a month in the refrigerator and up to 3 months in the freezer...and no preservatives, either!
Which processor is right for you? Good question. Choose an inexpensive model if you're just starting out. If you find that you agree with me about how helpful and versatile this piece of equipment can be for a raw food chef, then you can invest in a 'high quality' brand. I recommend the Cuisinart food processor for optimum performance and durability.
Whichever food processor you choose, there are some suggestions to ensure your success with your raw recipe. The main one is to not fill the food processor bowl more than 1/2 full. In addition, stop the processor part way through and use a rubber spatula to scrape down the ides of the bowl. That way you'll be sure to process all the ingredients the same throughout.
Finally, to ensure that you get the right texture for chunky sauces, pts, and spreads, use the pulse button so you don't over-process the raw ingredients.
So go ahead, make it easy on yourself! Raw food recipes made with the help of hardworking electrical appliances are a snap to make and a treat to eat. Enjoy!
