Strict standards of health and hygiene must be practised in all inclusive hotels to ensure food does not become contaminated as this type of holiday hotel caters for hundreds, if not thousands, of people every day. Buffet style food is usually offered at all inclusive hotel restaurants and it is vital that the food is stored, cooked and maintained at proper temperatures to ensure contamination does not take place. Food should be served fresh every day and never left out in the open where flies and other insects can contaminate it. Salmonella bacteria spread quickly in warm environments and cold food must always be chilled at the proper temperature, including salads which should never be served warm.

When one person becomes ill after eating food at an all inclusive hotel it is likely that an outbreak of food poisoning will occur, as many holidaymakers eat the same food from the same restaurants. Food must not be allowed to become contaminated with dirt or faeces and cross contamination can also result in serious illness.
