Here is a mouth-watering one that is so tasty you
will keep on baking it! This is a moist and delicious green tea cake recipe.
This recipe is for a traditional Japanese Pound cake. It is so healthy and it is used as a common
favourite on many types of occasion.
Green Tea Pound Cake Ingredients
For this recipe, you will need:

2 large eggs

1 cup flour
-
2/3 cup sugar
-
1/2 cup butter
-
1 tbsp matcha (green tea powder)

1/2 tsp baking powder
Method
- In a large bowl combine together flour, baking powder and green tea powder and mix them with a wooden
paddle.

Cream the Butter

Soften the butter at room temperature. Mash it slightly with a fork so it's easier for to handle.

Insert the mixer and turn it on high, then slowly add the sugar and continue mixing it until everything
is combined.

Then gradually add beaten eggs until you get a mousse the consistency of a batter.

Keep the mixer running and add your flour mixture to your butter-egg bowl. Continue mixing until the
batter is smooth.
- Preheat the oven to 340 degrees. Oil your loaf pan and pour the batter into it. Place your loaf pan in
the oven for 30-40 minutes.
- You will see that the pound cake is baked when the sides of it turn golden brown and pull away from
the pan.
- Take it out and cool for about 20 mins.
Serve it with a sprig of mint.
Matcha green tea powder is used in so many ways today - as a flavouring, in health foods from snack bars to
cereals, in confectionary and in cafes as a component of lattes, milkshakes and smoothies. This powder is
made from the green tea leaves of the Camellia Sinensis tea tree. It is stone ground and is kept in air-
tight containers. Studies have shown that matcha, or green tea powder, contains up to 13 times the
antioxidant EGCG (epigallatecatechin-gallate) that loose leaf green tea contains. It is these antioxidants
that are of tremendous benefit to our health.
When matcha powder is brewed, it is whisked in a small bowl with hot (not boiling) water until it becomes
frothy and thoroughly mixed. Because the leaves are directly drunk in powder form, instead of infusing the
water, the tea is so much higher in the antioxidants and vitamins than any other teas - green, herbal or
otherwise.
